Zesty Tomato & Red Onion Salad

I’m trying to be a little more conscious about what I’m putting into my body, and this light side salad is delicious and healthy, perfect for all year round. It also only takes about 5 minutes to make, and serves 2. I like it served with seared tuna for dinner.

Ingredients

4 x beef tomatoes, sliced

2 x limes

1 x red onion, thinly sliced

A pot of pitted black olives

feta

A drizzle of olive oil

A drizzle of balsamic vinegar

Recipe

  1. Add your sliced red onion to a bowl, squeezing the juice of both limes over the onions. Season the mixture, and mix together until the onions are completely coated in lime juice. Set aside (ideally for 30 minutes)

  2. Prepare your salad by laying the tomatoes on a plate, topping with the black olives, zesty onion mixture, and then a generous crumbling of feta. Mix together the olive oil and balsamic vinegar and drizzle over the entire salad. Season to taste with salt and pepper. Enjoy!
