A Hearty Winter Salad

This is arguably my favourite, easy dish of winter. It’s great for a healthy and delicious lunch, dinner parties or as a side to something else. It’s wholesome and filling, without feeling overly indulgent. This recipe serves 4.

Ingredients

1 diced butternut squash

1 diced sweet potato

1 large carrot

2 Maris Piper Potatoes

2 parsnips

3 garlic cloves, crushed

A few drizzles of olive oil

A bag of Rocket

3 tablespoons of balsamic vinegar

A small handful of fresh Basil

A small handful of fresh coriander

A small handful of fresh parsley

100g feta

Recipe

Preheat the oven to 200 fan. Begin by chopping all of the vegetables into small chunks, before adding them to a mixing bowl along with a large glug of olive oil, salt, pepper and garlic. Mix well.

Pour all of the vegetables into a roasting dish, putting it into the oven for 40 minutes, until golden brown, tossing occasionally.

Meanwhile, make the dressing in a small bowl, by mixing a large drizzle of olive oil with balsamic vinegar, herbs and a sprinkling of salt and pepper. Set aside until the vegetables are roasted.

Add your rocket to a large salad bowl, before topping with the roasted vegetables. Then drizzle the dressing, and crumble over the feta. Enjoy!
